It's a Pumpkin Palooza BrunchTacular Day. The focus is Fall flavors and brunch favorites.

After The Chew View: This show is right up my alley, Brunch is my all time favorite meal of any day and Fall is my all time favorite time of the year. 

First Dish Feature
Mario's Eggs in Hell
Mario's Eggs from Hell
Ingredients: Eggs, Onion & Garlic, Jalapeno Peppers, Chile Flakes, Tomato Sauce, Parmigiano-Reggiano, Pecorino Cheese or Parmesan Cheese, Extra Virgin Olive Oil.
Quick Recipe: Saute onions, jalapenos and chili flakes in oil, use cast iron skillet if available. Cook until softened and browned, (about 7 minutes.) Add tomato sauce and bring to boil. Lower heat to simmer, then crack eggs into sauce. Cook until whites set, but yolks are still runny, (about 5 to 6 minutes.) Remove pan from heat and sprinkle with cheese and basil shavings. Allow to cool 3-4 minutes before serving.

Chew Commentary
Clinton shared the origins of the term Brunch. He also mentioned that the word brunch did not come from Sex in the City and expounded on how much he did not at all enjoy the movie Sex in the City 2. Calling the movie the worst he'd ever seen. Mario chimed in that at brunch if you don't have anything good to say about something... we understand the intended ending to this phrase.

After The Chew View: I thought this was suppose to be open commentary hour Mario, lol. ;) I think the only people who liked Sex in the City 2 were those who received checks to be in it. 

The term Brunch was coined in 1895 by Guy Beringer, naming it the perfect late morning meal. Clinton quoted Beringer in a swanky Long Island accent, "Brunch is a cheerful, sociable and exciting meal. It puts you in a good temper, it makes you excited with yourself and your fellow beings, it sweeps away the worries and the cobwebs of the week." 

After The Chew View: Clinton is a riot, we we're cracking up over here! He was dead on with his New Jwersey, (misspelling intended) accent. 

Staying on the New Jersey kick, Daphne shared a little GTL (Gym-Tan-Laundry) showing off her 1 pound dumbbell weights that also serve as a fork and knife, which she used to indulge in Mario's dish. Clinton chimed in stating if someone gives these [dumbbells] to you as a gift, they're really trying to tell you something. 

After The Chew View: Is it just me or was this episode exceptionally funny? I thought I was watching Def Comedy Jam. Funny stuff! BTW, I'm really upset that I even know what GTL means! 

Special guest, Clinton's mom Brenda and several of her closest friends from Long Island joined the audience.  Clinton then shared a picture of his mom when she was part of a singing group in the 60's by the name of Joy and the Sorrows.

Carla's Pumpkin French Toast and Apple Cider Syrup
Ingredients: Milk, Half-and-Half, Eggs, Canned Pumpkin, Brown Sugar, Vanilla, Ginger, Nutmeg and Cinnamon, Challah or Brioche.
Carla's Pumpkin French Toast
Quick Recipe: Mix eggs, milk and half and half in a bowl. Add cinnamon and ginger, whisk in. Slice bread thickly. Dump in the wet mixture. (if you leave the bread in the mixture overnight, the mixture will absorb well.) Spread butter on grill and grill bread on griddle. Add powdered sugar, walnuts and syrup. After The Chew View: Yuuuuuuuuum!!!!!

Mario begins to dance a jig while assisting Carla with her french toast, proclaiming to cook it the way that she would. Soon the entire panel joined in to do the "Carla Dance." However Michael seemed to feel that Mario was a member of the "Rhythmless Nation." Carla then taught the entire dance her dance. After The Chew View: See, what did I tell you, hilarious all throughout the episode. I think Mario and Clinton  had plenty of rhythm. 

Special Tip of the Day:
Daphne's Quick Drinks
Freeze components of your favorite drinks in ice cube trays. Add seltzer water over the cubes and everyone has their cocktail ready for the party.

Third Meal Featured
Michael's Spinach Salad with Fried Egg, Bacon and Mushrooms.
Michael's Spinach, Fried Egg
Ingredients: Bacon, Shallots, Mushrooms, Chicken Stock, Balsamic Vinegar, Eggs, Fresh Spinach Leaves.
Quick Recipe: Fry bacon, cut into small slices prior. Saute bacon, onion, shallots, salt and mushroom. Add a touch of stock and then the vinegar. Add the warm dressing over a bed of spinach leaves, mix well. Saute eggs in oil, make them over easy. Place the eggs over the dish.

Fourth Meal Feature
Clinton's Homemade Granola
Granola is very expensive in the store, this recipe will run you about $.50 a serving.
Ingredients: Oats, Nuts, Dried Unsweetened Coconut, Raw Sunflower Seeds, Peanut Oil, Honey, Dried Fruit.
Recipe: Mix dry ingredients, take 3 cups of oats and add ½ of all other ingredients. ½ cup of walnuts, almonds, golden raisins, dried cranberries, sunflower seeds, sesame seeds, and coconut. Mix wet ingredients, peanut oil and honey. Add the wet ingredients to the dry, mix. Lay out flat on a covered baking sheet. Bake at 250 for 1 hour until golden brown. You can then use the granola to make a great granola bar. Put out with Greek yogurt and add all condiments, (raspberries, papaya, pistachios, pineapple, mango, chocolate chips, blueberries), allowing guests to make their own granola topped dish. For full recipe and ingredient measurements, see The Chew website page. Clinton's Homemade Granola

Pumpkin Palooza
Chew Correspondent Evette Rios traveled to the quintessential pumpkin carving paradise. 4000 pumpkins are carved into countless shapes for full fall madness. She visited Michael Natiello, the Creative Director at the Great Jack-o-Lantern Blaze. Evette learned all the tricks and treats of carving pumpkins. Michael Natiello then surprised the co-hosts with pumpkins carved in each person's likeness and Mario received a special pair of pumpkin croc shoes. The audience then all received 2 tickets to the Great Jack o Lantern Blaze.

First Dish Feature
Michael's Beet & Goat Cheese Ravioli
Michael shares a dish taken from Mark Vetri, the Executive Chef at Vetri's in Philly.
(Ingredients: Red Beet, Goat Cheese, Egg, Parmesan Cheese, Salt, Pepper, Wonton Wraps, Butter.)
Michael's Beet/Goat Cheese Ravioli
(Quick Recipe: Slice & roast beets until tender at 325 degrees for 45 mins. Add goat cheese, grated Parmesan and an egg. Add all to food processor. Puree until smooth, place mixture into a piping bag. Spray water on wonton, pipe mixture into wonton wraps. Fold wonton over to seal. Drop ravioli in a bit of butter and sear on both sides. Add tarragon leaves and Parmesan to skillet.)

Clinton shared that he experienced what he thought might have been his last meal. After the terrorist attacks in 2001, he officially was no longer a vegetarian. He determined that if the world was ending he needed to have a cheeseburger in his mouth.Today also marks LGBT day. That is Lesbian, Bi, Gay, and Transgender day. Clinton encourages the audience not to bully. 

New York Eats
Guests from the streets of New York comment on what they're last meals would be. Answers range from cheeseburgers, to tacos, to surf & turf and meringue pie.

Carla's The Perfect Cheeseburger, Onion Rings & Ginger Lemonade.
(Ingredients: Flour & Cornstarch, Instant Potato Flakes/Mashed Potatoes, Cayenne Pepper & Thyme, Club Soda, Japanese Breadcrumbs/Planko, Onions, Salt.)
(Quick Recipe: For Onion Rings- Add potato flakes, flour, cornstarch, and seasonings, add one cup of club soda, combine. Add onion rings to flour and then into mixture. Fry rings. For Cheeseburgers- Grill burgers, add cheddar while grilling. Toast buns. Add condiments, lettuce, tomato, mayo and onion. For Ginger Lemonade- see The Chew's website.)

Carla shared her best cheeseburger memory, her grandfather had a "Five and Dime" store, he cooked cheeseburgers in the front of the store and “ran numbers” in the back. That would be “the lottery for poor people.”

Clinton's Lobster Thermidor.
(Ingredients: Lobster Tails, Butter, Mushrooms & Onions, White Wine, Heavy Cream, Paprika, Thyme, Salt & Pepper, Butter Crackers.)
(Quick Recipe: In a tablespoon of butter saute onions and mushrooms. Add lobster, the paprika and thyme. For sauce, reduce white wine, let it simmer until it reduce to about ¾ of the of it's original, it should be very concentrated. Add butter. Place lobster combination into ramekins, pour sauce over. Add crumbled Ritz or other butter racers to the top of each dish. Broil ramekins for 3 minutes.)

Clinton shares the first time he had this dish. He was 13 years old and had gone to the Clam Box in Carmel California with his grandparents Cona and Wild Bill. It has been his favorite every since.

(Ingredients: Egg, Salt, Pepper, Cream, Robiola, Fresh shaved Black Truffles, Butter, Chives.)
(Quick Recipe: Mix egg, add cream. Pour egg into skillet, move sides around. Add cheese, chives and truffles. Pour onto plate and add Riobiola and truffles over the top.)

This omelet is pricey but Mario shared it's his last meal so he's going all out. This fabulous omelet is given to author and chef Melanie Dunea. Author of The Next Course and the Last Supper. Her cookbooks were given away to the entire audience.

Daphne's Chickpea Dumplings
(Ingredients: Flour, Yellow Cornmeal, Baking Powder, Kosher Salt, Half-and-Half, Chives, Onions, Celery, Carrots, Butter.)
(Quick Recipe: Add flour, cornmeal, salt and baking powder, mix. Add Half-and-Half and whisk. Add chives. Saute onions, celery, carrots in butter and olive oil, add vegetable broth and chickpeas. Add spoonfuls of the dumpling batter and cook until they float to top.)

Mario shares how much he enjoys the Ritz Crackers on Clinton's Lobster Thermidor. “It's like french chef went cracker!” The co-host share what would be playing during their last meal. Mario waned REM, U2 and Jimmy Hendrix. Micheal's choices would be Led Zepplin, Van Halen, Stevie Ray Vaughan. Micheal brings out a huge bowl of banana pudding to be added to Daphne's last meal. It's then shared with the entire audience.

(Ingredients: Vanilla Ice Cream, Peanut Butter, Graham Crackers, Coconut, Caramel Corn, Chocolate Chips, Peanuts, Cracker Jacks.)
(Quick Recipe: Add peanut butter to ice cream and mix. Add a small scoop to ½ of a graham cracker. Roll the sandwich into topping of choice. Add to the freezer until the graham crackers are soft.)

(Quick Recipes: Add vinegar to bowl and a splash of Worcestershire sauce. Add mustard and whisk. Add jalapeno, mayo, and red onion, whisk. Add cabbage to sauce. Grill sausages. Add fries to oil. Add sausage to bun and top slaw and fries, drizzle with ShaSha sauce.)

After The Chew Table (Sampling The Chew Dishes)



Carla's Scrumptious Pot Roast
We Put Carla's Pot Roast to the Test!

This dish in one word- Divine! Moderately easy, you only need to chop a few veges. And we have food for days. Please be sure to follow the recipe on The Chew website because this recipe includes baking the meat, not shown on the show, but its mentioned online.
Ingredients:
Amazing how inexpensive this was. I purchased items for this meal and for Michael's Turkey Tacos all in one shop. The total bill came to $21.65, of which $14 or so went towards this meal. Now that's a 3 pound top round and the veges. At home I already had white wine vinegar, (substituted it for the red wine vinegar the recipe called for), the garlic and the seasonings. If I'd made those additional purchases I would still only have spent another $12 roughly, so still not bad at all! Plus we will have plenty of meat to add to other dishes, my kind of meal.

Meal Review
I seasoned the roast with pepper, salt, garlic salt and seasoning salt. Sounds like a lot, but that was a big hunk a meat! Plus those are always my go-to seasonings. I braised the top round on all sides for a good while, I like it a little crispy for the finished product. The roast started off very nicely. 


I then added in the other ingredients and I tell you, within minutes the kitchen smelled like I had been working in there for hours. The aroma, incredible! 

Meal Challenge
This is starting to be a reoccurring theme, my biggest challenge was keeping my 7 month old occupied. Just as the onions were reaching my eyes, Baby Caleb was reaching his limit, hubby soon after walked through the door, thank God! The next challenge was only chopping the carrots, I forgot how much I don't enjoy that, the next time I will opt for a big pack of baby carrots. After that, all was well, the roast was added to the oven for a nice slow bake. 

Special Tip
I had pre-chopped, individually packaged garlic cloves. I swear by them! It made this process quick and easy and I don't have to worry about that weird garlic smell on my hands!

Suggestions
Go do something else! There's really not much to do once the roast in the oven other than salivate over how good the kitchen smells. I set a timer a couple times just to lather the juice across the roast...okay so it was also to get in a taste, but this will make it nice and tender.

Complete Dish
The pot roast was complete last night and waking up this morning the entire house smelled like Christmas, or Thanksgiving, one of those holidays when hours upon hours of hard work had been done in the kitchen. In this case I got the reward without the work. This was truly a Heavenly dish. There was nothing but silence as it was consumed. I added a side of cabbage, opted against mashed potatoes as "Operation Get Rid of Baby Fat" has commence. This dish was nothing less than scrumptious!

I have to share that I get warm fuzzies now that I can make this dish. Pot roast was a special dish my mother use to always make. I never got her recipe or learned how to make it, now that she has passed it makes me feel good to be able to make this meal for my family. Good one Carla!
